Yummy and Healthy Recipes for your Instant Pot

Happy New Year! Is one of your resolutions to eat healthier in 2019? Did you happen to get an Instant Pot as a gift over the holidays? The pressure cooker can be a great way to make quick, healthy meals. We searched and found some recipes that look extra tasty and easy to make. Enjoy!

Chicken Pho

This is a Whole30 compliant chicken pho recipe that you can make in an Instant Pot. Perfect on a chilly winter day. Along with chicken and chicken broth, it includes rice noodles, coriander, cloves, ginger, onion, apple, cilantro, salt, fish sauce, and maple syrup. Click here for the full recipe.

Vegetarian Pho

If you love pho but don’t eat meat we found this recipe that can also be done in the instant pot. It uses vegetable broth and tofu instead.

Protein Packed Mac and Cheese (Only takes five minutes to make!)

There are two great things about this recipe and it says it in the title – protein packed AND it only takes five minutes to make! The recipe calls for chicken broth but you could substitute with a vegetable broth if you’re vegetarian. One thing adding to the protein punch, it includes cottage cheese.

Yankee Pot Roast

Another comfort food – pot roast. Along with the pot roast, this meal includes carrots, celery, garlic, tomato paste, balsamic vinegar, procini mushrooms, fresh thyme, ghee cooking oil, and bone broth or chicken broth. Check out the recipe here.

Crispy Potatoes

As long as you’re not on a super low carb diet, potatoes are a great whole food to eat occasionally. And, not a lot needs to be said about this recipe except that it looks easy and yummy. These potatoes would be a great side dish at any meal!

Lemon Vegetable Risotto

Another great side dish, or could be a whole meal, this lemon veggie risotto that only takes ten minutes! It’s loaded with broccoli, asparagus, spinach, and peas.

Three Cheese Tortellini and Mushroom Soup

This is a great dish when the temperatures drop in winter. This recipe for three cheese tortellini and mushroom soup is warm, satisfying, and healthy! It calls for chicken broth but vegetarians can swap that out for vegetable broth.

Salsa Chicken Tacos

This is a very simple recipe that can be brought out for Taco Tuesday, or anytime! In addition to chicken, it calls for chili powder, salt, tomato salsa, and tortillas. That’s it! Easy and tasty.
